People from East China, including Jiangsu, Zhejiang and Anhui provinces, make sausages during Major Snow as an important part of preparation for Spring Festival. The best meat for sausages comes from the butt of the pig. The sausages should be dried in a well-ventilated place in the shade, and is edible after a week.
